RECIPE: Jerk-Style Chicken
McCormick® Caribbean Jerk Seasoning infuses chicken thighs and drumsticks with a balance of savory herbs and peppery heat that instantly transports your taste buds to the tropics. Enjoy Jerk-Style Chicken with fresh lime wedges, fried plantains, rice, and beans to round out the meal.
Prep Time: 10 minutes
Cook Time: 40 minutes
Place 1/2 cup chopped green onion, 1/4 cup firmly packed dark brown sugar, 1/4 cup vegetable oil, 4 tablespoons McCormick® Caribbean Jerk Seasoning, 2 tablespoons soy sauce, 1 tablespoon cider vinegar, and 2 large fresh garlic cloves in blender container or food processor. Cover. Pulse just until blended. Reserve 2 tablespoons marinade; set aside. Place 2 pounds bone-in chicken thighs and drumsticks (skin removed) and remaining marinade in large bowl, turning chicken to coat well. Cover. Refrigerate at least 2 hours or overnight. Remove chicken from marinade. Discard any remaining marinade. Grill chicken over medium heat with grill closed 30 to 40 minutes or until cooked through (internal temperature reaches 165°F), turning occasionally and basting with reserved marinade. Serve with fresh lime wedges, fried plantains, rice, and beans, if desired. Makes 8 servings.
