Prime Rib Roast

Crème Fraîche Mashed Potatoes
The most classic holiday side dish, taken to a whole new level. Light and fluffy mashed Yukon gold potatoes blended with rich, decadent crème fraîche, butter and a savory herb and spice mix.
Mac & Cheese with Shell Pasta
This mouthwatering cheesy favorite is better than mom’s! Tender pasta shells smothered in a creamy, cheesy sauce explode in your mouth with a burst of flavor that’s almost too tasty to be true!
Preparation
Prime Rib:
Take Rib roast out of the freezer 1-2 days prior to cooking and place in the refrigerator. Thaw your rib roast and butter under refrigeration until fully thawed. Remove Rastelli Signature butter and rib roast from refrigerator one hour before cooking and let warm up to room temperature. Preheat oven to 500°F. Place your rib roast into roasting pan with rack. Evenly spread herb butter over entire top and sides of rib roast until completely covered. Place in 500°F preheated oven and roast for 5 minutes for every pound, 5 lb. roast should be cooked for 25 minutes. After roasting at 500° F. for 25 minutes, turn oven OFF (DO NOT OPEN DOOR) and let roast sit for 2 hours in closed oven. IMPORTANT NOTE: Do not open oven during this step. After 2 hours, remove roast and let sit for 10-15 minutes before serving. Based on this cooking method you will have a Roast cooked to a medium doneness.
Side Dishes
: Preheat oven to 350°F. Remove film and lid and place tray on a baking sheet. If frozen, cook for 60-75 minutes (or 40-50 minutes if thawed), or until fully heated throughout and slightly brown on top. Product internal temperature should reach 165°F. If top browns too quickly, cover with foil until finished cooking. Let stand 5 minutes before serving.
